This is "Shirahasu" matcha from Marukyu Koyamaen in Uji.

It can be used not only for usucha (thin tea), but also for making sweets at home, for tea ceremony practice, or for tea soba noodles. It is also perfect for tea ceremony classes or tea parties with friends. It is even used by local Western confectioners and soba noodle shops in Kobe. The harmony of subtle astringency and concentrated umami pairs well with both Japanese and Western sweets, making it a popular and easy-to-use matcha.

This matcha is made from umami-rich new tea leaves grown in the same way as gyokuro, without kneading, and then finely ground into a powder using traditional stone mills.

◆What is Uji Marukyu Koyamaen?
Marukyu Koyamaen teas have received awards almost every year at the National Tea Exhibition and are chosen by tea ceremony grandmasters, shrines and temples, as well as high-end restaurants, ryokan, and tea connoisseurs. It is a company that has won numerous awards at tea exhibitions.
